Aquavit is a Scandinavian spirit that is popular at celebrations like weddings, Christmas and mid-summer festivals, where it is served ice-cold in small shot glasses.
Ingredients
600ml vodka
1g black pepper whole
2g fennel seed
2g caraway seed
10ml Pernod
30ml elderflower cordial
Method
Crush pepper, fennel seeds and caraway seeds using mortar and pestle
Add to vodka, then add Pernod and elderflower cordial
Store in an airtight container at room temperature for 24 hours
Pass through a coffee filter then store in a bottle in the freezer
